Basic Yellow Cupcakes
2 1/2 cups all purpose flour
1 1/2 cups sugar
3 teaspoons baking powder
1 teaspoon salt
1 1/4 cups milk
2/3 cup shortening
2 teaspoons vanilla
2 egg yolks
Heat oven to 350°F.
In large bowl, blend all ingredients except, vanilla, egg yolks and eggs, at low speed until moistened.
Beat 2 minutes at medium speed.
Add vanilla, egg yolks, and eggs; beat 2 more minutes at medium speed.
Spoon batter into cupcake liners.
This has to be the best raw cake batter I have ever tasted!

Bake at 350°F. for 15-25 min. (depending on the type and size of your liners) or until toothpick inserted comes out clean.
The frosting was so easy!

I found this new cool whip frosting in the freezer section at my local market.
